Instructions
- Place sliced beets in a clean jar.
- In a saucepan, combine vinegar, water, sugar, salt, peppercorns, and bay leaf.
- Bring the mixture to a boil, then simmer for 2 minutes.
- Pour the hot liquid over the beets, ensuring they are fully submerged.
- Let cool to room temperature, then cover and refrigerate for at least 1 hour.

- Store in the refrigerator for up to 2 weeks.
- Use a mandoline for even slices.
