Ingredients
Scale
- 1 cup quinoa
- 2 cups water
- 1 bunch kale, chopped
- 1/2 cup cooked chickpeas
- 1/4 cup chopped red onion
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Rinse the quinoa.
- Cook quinoa in water according to package directions.
- While quinoa cooks, massage kale with a little olive oil.
- Whisk together olive oil, lemon juice, apple cider vinegar, and Dijon mustard for the vinaigrette. Season with salt and pepper.
- Combine cooked quinoa, kale, chickpeas, and red onion in a bowl.
- Drizzle with lemon vinaigrette.
- Top with feta cheese, if desired.

- You can add other vegetables like bell peppers or cucumbers.
- For extra protein, add grilled chicken or tofu.
