Quinoa Kale Power Bowl with Lemon Vinaigrette

Description

A healthy and flavorful bowl with quinoa, kale, and a zesty lemon dressing.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 bunch kale, chopped
  • 1/2 cup cooked chickpeas
  • 1/4 cup chopped red onion
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa.
  2. Cook quinoa in water according to package directions.
  3. While quinoa cooks, massage kale with a little olive oil.
  4. Whisk together olive oil, lemon juice, apple cider vinegar, and Dijon mustard for the vinaigrette. Season with salt and pepper.
  5. Combine cooked quinoa, kale, chickpeas, and red onion in a bowl.
  6. Drizzle with lemon vinaigrette.
  7. Top with feta cheese, if desired.

Notes

  • You can add other vegetables like bell peppers or cucumbers.
  • For extra protein, add grilled chicken or tofu.
