Description

Classic red velvet cookies with a cream cheese frosting.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • 1 ounce unsweetened chocolate, melted
  • 1/4 cup buttermilk
  • 12 drops red food coloring
  • For the Cream Cheese Frosting:
  • 4 ounces cream cheese, softened
  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. In a small bowl, combine the cocoa powder and melted chocolate. Stir in the buttermilk, red food coloring, and the chocolate mixture.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. For the frosting: Beat together the cream cheese and butter until smooth.
  11. Stir in the vanilla extract. Gradually add the powdered sugar, beating until combined and smooth.
  12. Once the cookies are completely cool, frost them with the cream cheese frosting.

Notes

  • For a richer flavor, you can use dark unsweetened chocolate.
  • If you don’t have buttermilk, you can make a substitute by mixing 1/4 cup of milk with 1/2 teaspoon of white vinegar or lemon juice and letting it sit for 5 minutes.
  • Store frosted cookies in an airtight container in the refrigerator.
