- 1 lb carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrot sticks with olive oil, salt, pepper, garlic powder, and thyme.
- Spread carrots in a single layer on a baking sheet.
- Roast for 20 minutes, turning halfway.
- Mix honey and mustard in a small bowl.
- Brush the glaze over the carrots and roast for 5 more minutes.
- Serve warm.
