Ingredients

- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups seafood broth
- 1 cup potatoes, diced
- 1 cup heavy cream
- 1/2 cup corn kernels
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute.
- Pour in seafood broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
- Add shrimp and cook until pink, about 3-5 minutes.
- Stir in heavy cream and corn. Season with salt and pepper.
- Heat through, but do not boil.
- Garnish with fresh parsley before serving.
Notes
- You can add other seafood like clams or fish.
- Adjust the amount of vegetables to your liking.
