Seafood Chowder with Shrimp

Description

A creamy and flavorful chowder with shrimp and vegetables.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups seafood broth
  • 1 cup potatoes, diced
  • 1 cup heavy cream
  • 1/2 cup corn kernels
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery; cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in seafood broth and add potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-15 minutes.
  5. Add shrimp and cook until pink, about 3-5 minutes.
  6. Stir in heavy cream and corn. Season with salt and pepper.
  7. Heat through, but do not boil.
  8. Garnish with fresh parsley before serving.

Notes

  • You can add other seafood like clams or fish.
  • Adjust the amount of vegetables to your liking.
