Description
A comforting skillet cottage pie topped with sweet potato mash.
Ingredients

- 1 lb ground beef
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 tbsp tomato paste
- 1 cup beef broth
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Boil sweet potatoes until soft, then mash with butter and milk.
- Brown beef in a skillet, add onion, carrots, and garlic.
- Stir in tomato paste and beef broth, simmer until thickened.
- Add peas, season with salt and pepper.
- Spread mashed sweet potatoes over the beef mixture.
- Bake for 20 minutes until golden.
Notes
- Swap beef for ground turkey if preferred.
- Add grated cheese to the sweet potato topping.
- Freezes well for up to a month.
