Description

A comforting skillet cottage pie topped with sweet potato mash.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 cup beef broth
  • 2 large sweet potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Boil sweet potatoes until soft, then mash with butter and milk.
  3. Brown beef in a skillet, add onion, carrots, and garlic.
  4. Stir in tomato paste and beef broth, simmer until thickened.
  5. Add peas, season with salt and pepper.
  6. Spread mashed sweet potatoes over the beef mixture.
  7. Bake for 20 minutes until golden.

Notes

  • Swap beef for ground turkey if preferred.
  • Add grated cheese to the sweet potato topping.
  • Freezes well for up to a month.
