Description

A hearty stew made with beef, vegetables, and barley, cooked in a slow cooker.


Ingredients

  • 1.5 lbs beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup pearl barley
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet. Brown the beef stew meat.
  2. Place the browned beef in the slow cooker.
  3. Add onion, carrots, celery, and garlic to the slow cooker.
  4. Pour in beef broth.
  5. Stir in barley, thyme, rosemary, salt, and pepper.
  6. Cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and the barley is cooked.

Notes

  • You can add other vegetables, such as potatoes or mushrooms.
