Description
A hearty beef stew made in a slow cooker.
Ingredients

- 1.5 lbs beef stew meat
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb potatoes, peeled and cubed
Instructions
- Heat olive oil in a skillet. Brown the beef.
- Place beef in the slow cooker.
- Add onion, carrots, celery, and garlic to the slow cooker.
- Pour in beef broth. Add thyme, rosemary, salt, and pepper.
- Cook on low for 6 hours.
- Add potatoes during the last 2 hours of cooking.
Notes
- Serve hot.
- Garnish with fresh parsley.
