Description

A hearty beef stew made in a slow cooker.


Ingredients

  • 1.5 lbs beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb potatoes, peeled and cubed

Instructions

  1. Heat olive oil in a skillet. Brown the beef.
  2. Place beef in the slow cooker.
  3. Add onion, carrots, celery, and garlic to the slow cooker.
  4. Pour in beef broth. Add thyme, rosemary, salt, and pepper.
  5. Cook on low for 6 hours.
  6. Add potatoes during the last 2 hours of cooking.

Notes

  • Serve hot.
  • Garnish with fresh parsley.
