Ingredients

- 1 pound smoked sausage, sliced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 4 cups potatoes, peeled and diced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup milk or cream
- Chopped fresh parsley, for garnish
Instructions
- In a large pot, brown the sausage in olive oil.
- Add onion and garlic; cook until softened.
- Pour in chicken broth, add potatoes, thyme, salt, and pepper.
- Bring to a boil, then simmer until potatoes are tender.
- Stir in milk or cream. Heat through.
- Garnish with parsley before serving.
