Smoked Sausage & Potato Soup

Description

A hearty soup with smoked sausage and potatoes.


Ingredients

  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk or cream
  • Chopped fresh parsley, for garnish

Instructions

  1. In a large pot, brown the sausage in olive oil.
  2. Add onion and garlic; cook until softened.
  3. Pour in chicken broth, add potatoes, thyme, salt, and pepper.
  4. Bring to a boil, then simmer until potatoes are tender.
  5. Stir in milk or cream. Heat through.
  6. Garnish with parsley before serving.
