Ingredients

Instructions
- Blanch the peas in boiling water for 2 minutes, then drain and rinse with cold water.
 - In a bowl, mix the peas with chopped mint.
 - Whisk together olive oil, lemon juice, salt, and pepper.
 - Pour the dressing over the salad and toss gently.
 - Serve chilled.
