Description
Chewy and spiced ginger molasses cookies that taste like the Starbucks favorite.
Ingredients

- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 3/4 cup packed dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1/4 cup unsulfured molasses
- 2 tablespoons granulated sugar, for rolling
Instructions
- Whisk together flour, ginger, baking soda, cinnamon, cloves, and salt in a medium bowl.
- In a large bowl, beat butter, brown sugar, and 1/2 cup granulated sugar until creamy.
- Beat in egg and molasses until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough for at least 1 hour.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll the dough into 1-inch balls.
- Roll each ball in the 2 tablespoons of granulated sugar.
- Place cookies 2 inches apart on the prepared baking sheets.
- Bake for 9-11 minutes, or until the edges are set and the centers are still slightly soft.
- Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For extra chewiness, do not overbake.
- Store cookies in an airtight container at room temperature for up to 3 days.
