Description
A hearty soup with steak and potatoes.
Ingredients

- 1 pound steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups beef broth
- 4 cups potatoes, peeled and cubed
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add steak and cook until browned on all sides. Remove and set aside.
- Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more.
- Pour in beef broth. Add potatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
- Return the steak to the pot and heat through.
- Serve hot, garnished with fresh parsley.
Notes
- You can use any type of steak you prefer.
- For a thicker soup, you can mash some of the potatoes.
