Steak and Potato Soup

Description

A hearty soup with steak and potatoes.


Ingredients

  • 1 pound steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 4 cups potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add steak and cook until browned on all sides. Remove and set aside.
  3. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  4. Stir in garlic and cook for 1 minute more.
  5. Pour in beef broth. Add potatoes, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes, or until potatoes are tender.
  7. Return the steak to the pot and heat through.
  8. Serve hot, garnished with fresh parsley.

Notes

  • You can use any type of steak you prefer.
  • For a thicker soup, you can mash some of the potatoes.
