Yield: 6 large servings
Ingredients:
• 2 lbs (900 g) ground beef
• 1 box (6 oz / 170 g) Stove Top stuffing mix (any flavor)
• 1 cup (240 ml) milk
• 2 large eggs
• ½ cup (120 ml) ketchup
• 1 small onion, finely diced
• 1 teaspoon garlic powder
• ½ teaspoon black pepper
Topping:
• ⅓ cup (80 ml) ketchup
• 2 tablespoons brown sugar
• 1 tablespoon yellow mustard
How to make it:
- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or baking dish.
- In a large bowl, combine the Stove Top stuffing mix and milk. Let it sit for about 2 minutes so the stuffing softens.
- Add the ground beef, eggs, ketchup, diced onion, garlic powder, and black pepper. Mix gently until everything is just combined.
- Shape the mixture into a loaf and place it in the prepared pan.
- In a small bowl, stir together the ketchup, brown sugar, and mustard. Spread this glaze over the top of the Stove Top Stuffing Meatloaf.
- Bake the Stove Top Stuffing Meatloaf for 55–65 minutes, or until fully cooked through and the top is slightly caramelized.
- Let the meatloaf rest for 10 minutes before slicing to keep it juicy.
Serve this Stove Top Stuffing Meatloaf with mashed potatoes or roasted vegetables for the ultimate comfort meal.
