A fun and easy summer treat, these strawberry shortcake push pops are perfect for parties or a cool down.
Ingredients

- 1 pound fresh strawberries, hulled and chopped
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 12 store-bought shortcake cups or pound cake slices, cut into 1-inch cubes
Instructions
- In a bowl, combine the chopped strawberries, granulated sugar, and lemon juice. Let sit for 15 minutes to macerate.
- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- To assemble, place a layer of cake cubes at the bottom of each push pop container.
- Spoon a layer of macerated strawberries over the cake.
- Add a layer of whipped cream.
- Repeat the layers of cake, strawberries, and cream until the container is full, ending with a layer of cream.
- Chill for at least 30 minutes before serving.
Notes
- You can make the strawberry mixture and whipped cream a day in advance and store them separately in the refrigerator.
- If you don’t have push pop containers, you can use small glasses or jars.
