Strawberry Shortcake Push Pops

Description

A fun and easy summer treat, these strawberry shortcake push pops are perfect for parties or a cool down.


Ingredients

  • 1 pound fresh strawberries, hulled and chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 12 store-bought shortcake cups or pound cake slices, cut into 1-inch cubes

Instructions

  1. In a bowl, combine the chopped strawberries, granulated sugar, and lemon juice. Let sit for 15 minutes to macerate.
  2. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  3. To assemble, place a layer of cake cubes at the bottom of each push pop container.
  4. Spoon a layer of macerated strawberries over the cake.
  5. Add a layer of whipped cream.
  6. Repeat the layers of cake, strawberries, and cream until the container is full, ending with a layer of cream.
  7. Chill for at least 30 minutes before serving.

Notes

  • You can make the strawberry mixture and whipped cream a day in advance and store them separately in the refrigerator.
  • If you don’t have push pop containers, you can use small glasses or jars.
