Ingredients

- 1 onion, chopped

- 4 cups fresh corn kernels (or frozen)
- 4 cups vegetable broth
- 1 cup milk or cream

Instructions
- Melt butter in a large pot.
- Sauté onion until softened. Add garlic and cook briefly.
- Add corn and broth. Simmer until corn is tender.
- Stir in milk or cream. Heat through.
- Season with salt and pepper.
- Serve hot, with optional toppings.

- For a thicker chowder, blend a portion of the soup before adding the milk/cream.
