Instructions
- Roll out one round of dough and fit into a 9-inch pie pan. Trim and chill while you make the filling.
- In a large bowl, toss sliced peaches with sugars, cornstarch, lemon juice, vanilla, cinnamon, salt, and optional flavorings. Let sit for 10–15 minutes.
