Description
A refreshingly light, fruit-forward peach sorbet made with just 3 ingredients and no ice cream maker. Perfect for hot days, and totally vegan!
Ingredients

- 4 cups fresh ripe peaches, peeled and sliced (about 5–6 peaches)
- ¼ cup granulated sugar (or honey/maple syrup)
- 1 tbsp lemon juice
- Optional: pinch of salt, splash of vanilla extract, or a few mint leaves
Instructions
- Peel and slice the peaches. Freeze them in a single layer on a parchment-lined baking sheet for at least 4 hours or until solid.
- Add frozen peaches, sugar, and lemon juice to a high-speed blender or food processor. Blend until smooth, scraping down the sides as needed.
- Transfer the mixture to a shallow freezer-safe container. Press a piece of parchment directly on the surface and freeze for at least 2–3 hours.
- Let sit at room temperature for 5–10 minutes before scooping. Serve and enjoy!
Notes
Use very ripe peaches for the best flavor. A splash of vodka or peach schnapps can improve texture. Try blending in herbs or berries for a twist.
