Description

A simple and healthy soup with white beans, spinach, and Tuscan flavors.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon red pepper flakes
  • 4 cups vegetable broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 5 ounces fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, rosemary, and red pepper flakes; cook for 1 minute more.
  4. Pour in vegetable broth and bring to a simmer.
  5. Stir in cannellini beans and spinach. Cook until spinach wilts, about 3-5 minutes.
  6. Season with salt and pepper.
