Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1/2 teaspoon red pepper flakes
- 4 cups vegetable broth
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 5 ounces fresh spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, rosemary, and red pepper flakes; cook for 1 minute more.
- Pour in vegetable broth and bring to a simmer.
- Stir in cannellini beans and spinach. Cook until spinach wilts, about 3-5 minutes.
- Season with salt and pepper.
