Ingredients

- 4 medium beets, roasted and sliced
 - 1/2 cup crumbled goat cheese
 - 1/4 cup chopped walnuts, toasted
 - 4 cups mixed greens
 - 2 tbsp balsamic vinegar
 - 3 tbsp olive oil
 - 1 tsp honey
 - Salt and pepper to taste
 
Instructions
- Preheat oven to 400°F. Wrap beets in foil and roast for 45-50 minutes until tender.
 - Let beets cool, then peel and slice them.
 - In a bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper.
 - Toss mixed greens with half the dressing.
 - Arrange greens on a plate, top with sliced beets, goat cheese, and walnuts.
 - Drizzle remaining dressing over the salad.
