Description
A simple recipe for light and airy whipped shortbread cookies.
Ingredients
Scale
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Beat in the vanilla extract.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Shape the dough into small balls and place them on the prepared baking sheets, about 2 inches apart.
- Flatten each cookie slightly with the bottom of a glass or your fingers.
- Bake for 20-25 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a different flavor, you can add 1/2 teaspoon of almond extract instead of vanilla.
- These cookies are delicate, so handle them with care when they are warm.
