White Chocolate Cranberry Oatmeal Cookies

Description

These cookies combine the chewiness of oatmeal with the sweetness of white chocolate and tartness of cranberries.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the rolled oats, dried cranberries, and white chocolate chips.
  7. Drop by rounded tablespoons onto ungreased baking sheets.
  8. Bake for 10-12 minutes, or until the edges are golden brown.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, slightly underbake them.
  • You can substitute white chocolate chunks for chips.
  • Store cookies in an airtight container at room temperature.
