Wild Rice & Mushroom Soup

Description

A hearty soup with wild rice and mushrooms.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups vegetable broth
  • 1/2 cup wild rice
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot.
  2. Add onion and cook until softened.
  3. Add garlic and mushrooms, cook until mushrooms are tender.
  4. Pour in vegetable broth and add wild rice.
  5. Simmer until rice is cooked.
  6. Stir in heavy cream.
  7. Season with salt and pepper.

  • You can add other vegetables.
