Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups vegetable broth
- 1/2 cup wild rice
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot.
- Add onion and cook until softened.
- Add garlic and mushrooms, cook until mushrooms are tender.
- Pour in vegetable broth and add wild rice.
- Simmer until rice is cooked.
- Stir in heavy cream.
- Season with salt and pepper.
