Wild Rice Pilaf

Description

A simple recipe for wild rice pilaf.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup wild rice, rinsed
  • 2 cups vegetable broth
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add onion, celery, and carrots; cook until softened, about 5 minutes.
  3. Stir in wild rice and cook for 1 minute.
  4. Pour in vegetable broth, season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer, covered, for 45-50 minutes, or until rice is tender and liquid is absorbed.
  6. Stir in dried cranberries and pecans.
  7. Serve warm.

Notes

  • You can substitute chicken broth for vegetable broth.
  • Add other vegetables like mushrooms or bell peppers.
