Description
A simple recipe for wild rice pilaf.
Ingredients

- 1 tablespoon olive oil
- 1 cup wild rice, rinsed
- 2 cups vegetable broth
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans
- Salt and pepper to taste
Instructions
- Heat olive oil in a saucepan over medium heat.
- Add onion, celery, and carrots; cook until softened, about 5 minutes.
- Stir in wild rice and cook for 1 minute.
- Pour in vegetable broth, season with salt and pepper.
- Bring to a boil, then reduce heat and simmer, covered, for 45-50 minutes, or until rice is tender and liquid is absorbed.
- Stir in dried cranberries and pecans.
- Serve warm.
Notes
- You can substitute chicken broth for vegetable broth.
- Add other vegetables like mushrooms or bell peppers.
