Description

Ingredients

  • 2 cups mixed winter vegetables (carrots, parsnips, sweet potatoes, diced)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss vegetables, onion, garlic, olive oil, salt, pepper, and thyme in a bowl.
  3. Spread the mixture in a baking dish.
  4. Cover with foil and bake for 30 minutes.
  5. Remove foil, sprinkle cheese and breadcrumbs on top.
  6. Bake uncovered for another 15 minutes until golden and bubbly.
  7. Let cool slightly before serving.

  • Use gluten-free breadcrumbs if needed.
