Description
A hearty winter veggie casserole topped with melted cheese, perfect for cold days.
Ingredients

- 2 cups mixed winter vegetables (carrots, parsnips, sweet potatoes, diced)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- Toss vegetables, onion, garlic, olive oil, salt, pepper, and thyme in a bowl.
- Spread the mixture in a baking dish.
- Cover with foil and bake for 30 minutes.
- Remove foil, sprinkle cheese and breadcrumbs on top.
- Bake uncovered for another 15 minutes until golden and bubbly.
- Let cool slightly before serving.
Notes
- Substitute any winter vegetables you prefer.
- Use gluten-free breadcrumbs if needed.
- Add cooked chicken or sausage for extra protein.
