Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 jalapeño, seeded and minced (optional)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth
- 2 (15-ounce) cans black beans, rinsed and drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- Salt and pepper to taste
- Optional toppings: avocado, sour cream, cilantro, lime wedges
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic, bell pepper, and jalapeño (if using) and cook for 3 minutes.
- Stir in cumin, chili powder, and smoked paprika. Cook for 1 minute.
- Pour in vegetable broth, black beans, and diced tomatoes.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Season with salt and pepper.
- Serve hot with your favorite toppings.
Notes
- Adjust the amount of jalapeño to control the spiciness.
- For a smoother soup, blend a portion of the soup before serving.
