Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 4 cups vegetable broth
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • Salt and pepper to taste
  • Optional toppings: avocado, sour cream, cilantro, lime wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, bell pepper, and jalapeño (if using) and cook for 3 minutes.
  4. Stir in cumin, chili powder, and smoked paprika. Cook for 1 minute.
  5. Pour in vegetable broth, black beans, and diced tomatoes.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Season with salt and pepper.
  8. Serve hot with your favorite toppings.

Notes

  • Adjust the amount of jalapeño to control the spiciness.
  • For a smoother soup, blend a portion of the soup before serving.
