Description

A simple and refreshing salad with avocado, corn, and black beans.


Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black beans, corn, red bell pepper, and red onion.
  2. Gently stir in the diced avocado and chopped cilantro.
  3. In a small bowl, whisk together lime juice and olive oil.
  4. Pour dressing over the salad and toss to combine.
  5. Season with salt and pepper to your preference.
