  • 2 tablespoons olive oil
  • 1 lemon, juiced

  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  4. Place the chicken thighs in a baking dish.
  5. Pour the lemon-herb mixture over the chicken thighs, ensuring they are evenly coated.
  6. Bake for 35-45 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature should reach 165°F (74°C).
