A simple recipe for homemade cherry vanilla ice cream sandwiches.

- 1 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 pint cherry vanilla ice cream, softened
Instructions
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto baking sheets lined with parchment paper, about 2 inches apart.
- Bake at 375°F (190°C) for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once the cookies are completely cool, spread a generous amount of softened cherry vanilla ice cream onto the bottom of one cookie and top with another cookie.
- Press gently to form a sandwich.
- Wrap each sandwich in plastic wrap and freeze until firm.
Notes
- For best results, use softened, but not melted, ice cream.
- You can make the cookie dough ahead of time and refrigerate it for up to 3 days.
