Flavorful chicken shawarma served over rice with fresh toppings.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 2 cups cooked rice
- 1 cup chopped tomatoes
- 1 cup chopped cucumber
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
- Tahini sauce for drizzling
Instructions
- In a bowl, combine chicken pieces, olive oil, lemon juice, cumin, coriander, paprika, turmeric, garlic powder, cayenne pepper (if using), salt, and pepper. Toss to coat the chicken evenly.
- Marinate for at least 30 minutes, or preferably longer in the refrigerator.
- Cook the chicken: You can grill, pan-fry, or bake the chicken until cooked through and slightly browned.
- Grill: Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side, or until cooked through.
- Pan-fry: Heat a skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through.
- Bake: Preheat oven to 400°F (200°C). Spread chicken on a baking sheet and bake for 15-20 minutes, or until cooked through.
- Assemble the bowls: Divide cooked rice among serving bowls.
- Top the rice with the cooked chicken shawarma.
- Add chopped tomatoes, cucumber, red onion, and parsley.
- Drizzle with tahini sauce.
Notes
- For a spicier kick, add more cayenne pepper.
- You can substitute chicken breast for thighs, but adjust cooking time to prevent drying out.
- Other topping ideas include pickled turnips, Kalamata olives, or a dollop of plain yogurt.
