Coconut Lime Popsicles

Description

Refreshing homemade popsicles with coconut and lime flavors.


Ingredients

  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup fresh lime juice
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon lime zest

Instructions

  1. In a small saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves. Remove from heat and let cool.
  2. In a bowl, whisk together the cooled sugar syrup, coconut milk, lime juice, and lime zest.
  3. Pour the mixture into popsicle molds.
  4. Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.
  5. To unmold, run the molds under warm water for a few seconds.

Notes

  • Adjust sugar to your sweetness preference.
  • For a creamier texture, use only full-fat coconut milk.
