Ingredients

- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup fresh lime juice
- 1/4 cup granulated sugar
- 1/4 cup water
- 1 teaspoon lime zest
Instructions
- In a small saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves. Remove from heat and let cool.
- In a bowl, whisk together the cooled sugar syrup, coconut milk, lime juice, and lime zest.
- Pour the mixture into popsicle molds.
- Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.
- To unmold, run the molds under warm water for a few seconds.
Notes
- Adjust sugar to your sweetness preference.
- For a creamier texture, use only full-fat coconut milk.
