Coconut Mango Popsicles

Description

Refreshing homemade popsicles with coconut milk and fresh mango.


Ingredients

Scale
  • 1 ripe mango, peeled and cubed
  • 1 cup coconut milk
  • 2 tablespoons honey or maple syrup (optional, adjust to taste)
  • 1/4 teaspoon lime juice

Instructions

  1. Puree the mango cubes in a blender until smooth.
  2. Add the coconut milk, honey (if using), and lime juice to the blender. Blend again until well combined.
  3. Pour the mixture into popsicle molds.
  4. Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.
  5. To unmold, run the molds under warm water for a few seconds.

Notes

  • Use very ripe mangoes for the best flavor.
  • If you don’t have popsicle molds, you can use small paper cups and cover them with foil, inserting the sticks through the foil.
