Description
Refreshing homemade popsicles with coconut milk and fresh mango.
Ingredients

- 1 ripe mango, peeled and cubed
- 1 cup coconut milk
- 2 tablespoons honey or maple syrup (optional, adjust to taste)
- 1/4 teaspoon lime juice
Instructions
- Puree the mango cubes in a blender until smooth.
- Add the coconut milk, honey (if using), and lime juice to the blender. Blend again until well combined.
- Pour the mixture into popsicle molds.
- Insert popsicle sticks and freeze for at least 4-6 hours, or until solid.
- To unmold, run the molds under warm water for a few seconds.
Notes
- Use very ripe mangoes for the best flavor.
- If you don’t have popsicle molds, you can use small paper cups and cover them with foil, inserting the sticks through the foil.
