Description

Easy pinwheel appetizers with cream cheese, cucumber, and dill.


Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 large flour tortillas
  • 1/2 cup cucumber, finely diced

Instructions

  1. In a medium bowl, combine the softened cream cheese, chopped dill, lemon juice, salt, and pepper. Mix until well combined.
  2. Spread the cream cheese mixture evenly over each flour tortilla, leaving a small border around the edges.
  3. Sprinkle the finely diced cucumber over the cream cheese mixture on each tortilla.
  4. Tightly roll up each tortilla, starting from one edge.
  5. Wrap the rolled tortillas in plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. Unwrap the chilled tortillas and slice them into 1/2-inch thick pinwheels.
  7. Arrange the pinwheels on a serving platter and serve immediately.

Notes

  • For a firmer roll, toast the tortillas lightly before spreading the cream cheese.
  • You can add other finely diced vegetables like bell peppers or red onion.
  • These can be made a few hours ahead and kept refrigerated.
