Description

A classic egg salad sandwich enhanced with the bright flavor of fresh herbs.


Ingredients

  • 4 large eggs, hard-boiled and chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 4 slices of bread
  • Lettuce leaves (optional)
  • Tomato slices (optional)

Instructions

  1. In a medium bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, chives, parsley, and dill.
  2. Mix gently until well combined.
  3. Season with salt and black pepper to your preference.
  4. Spread the egg salad mixture evenly onto two slices of bread.
  5. Top with lettuce leaves and tomato slices if desired.
  6. Place the remaining two slices of bread on top to complete the sandwiches.

Notes

  • For a creamier texture, add a little more mayonnaise.
  • You can substitute other fresh herbs like tarragon or basil.
  • Toast the bread for added crunch.
