Feta and Spinach Stuffed Salmon

Description

A flavorful and healthy salmon dish stuffed with feta cheese and spinach.


Ingredients

  • 2 salmon fillets
  • 1 cup fresh spinach, chopped
  • 1/4 cup crumbled feta cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the chopped spinach, feta cheese, and minced garlic.
  3. Season the salmon fillets with salt and pepper.
  4. Create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
  5. Stuff the spinach and feta mixture into the pockets of the salmon fillets.
  6. Drizzle the stuffed salmon with olive oil.
  7. Place the salmon on a baking sheet.
  8. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Notes

  • You can add a squeeze of lemon juice before serving for extra brightness.
  • Serve with your favorite side dishes like roasted vegetables or a fresh salad.
