Ingredients

- 2 salmon fillets
- 1 cup fresh spinach, chopped
- 1/4 cup crumbled feta cheese
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the chopped spinach, feta cheese, and minced garlic.
- Season the salmon fillets with salt and pepper.
- Create a pocket in each salmon fillet by slicing horizontally, being careful not to cut all the way through.
- Stuff the spinach and feta mixture into the pockets of the salmon fillets.
- Drizzle the stuffed salmon with olive oil.
- Place the salmon on a baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Notes
- You can add a squeeze of lemon juice before serving for extra brightness.
- Serve with your favorite side dishes like roasted vegetables or a fresh salad.
