- 2 ears of corn, husked
- 2 ripe avocados, diced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped cilantro
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat your grill to medium-high heat.
- Grill the corn for about 8-10 minutes, turning occasionally, until lightly charred. Let cool, then cut the kernels off the cob.
- In a large bowl, combine the grilled corn kernels, diced avocado, sliced red onion, and chopped cilantro.
- In a small bowl, whisk together the olive oil and lime juice. Season with salt and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of chili powder to the dressing.
- If you don’t have a grill, you can pan-sear the corn kernels in a skillet with a little oil until lightly browned.
