Description

A fresh and flavorful salad featuring grilled corn, creamy avocado, and a zesty lime dressing.


Ingredients

  • 2 ears of corn, husked
  • 2 ripe avocados, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for about 8-10 minutes, turning occasionally, until lightly charred. Let cool, then cut the kernels off the cob.
  3. In a large bowl, combine the grilled corn kernels, diced avocado, sliced red onion, and chopped cilantro.
  4. In a small bowl, whisk together the olive oil and lime juice. Season with salt and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of chili powder to the dressing.
  • If you don’t have a grill, you can pan-sear the corn kernels in a skillet with a little oil until lightly browned.
