Description

A simple and healthy wrap filled with grilled vegetables and hummus.


Ingredients

  • 1 cup assorted vegetables, sliced (e.g., bell peppers, zucchini, red onion)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 large whole wheat tortillas
  • 1/2 cup hummus
  • Optional: fresh spinach or arugula

Instructions

  1. Toss the sliced vegetables with olive oil, salt, and pepper.
  2. Grill the vegetables until tender and slightly charred.
  3. Warm the tortillas slightly.
  4. Spread hummus evenly over each tortilla.
  5. Arrange the grilled vegetables on top of the hummus.
  6. Add spinach or arugula if desired.
  7. Fold or roll the tortillas to create wraps.

Notes

  • You can use any vegetables you have on hand.
  • For a spicier wrap, add a pinch of red pepper flakes to the vegetables before grilling.
