- 1 large zucchini, cut into 1-inch pieces
- 8 ounces halloumi cheese, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a bowl, combine the zucchini pieces and halloumi cubes.
- Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Toss to coat evenly.
- Thread the zucchini and halloumi onto the skewers, alternating the pieces.
- Preheat your grill to medium-high heat.
- Grill the skewers for 8-10 minutes, turning occasionally, until the zucchini is tender and slightly charred, and the halloumi is golden brown.
- Serve immediately.
Notes
- You can add other vegetables like cherry tomatoes or bell peppers to the skewers.
- A squeeze of lemon juice before serving adds brightness.
