Description

Easy and flavorful skewers featuring zucchini and halloumi cheese, perfect for grilling.

Ingredients

Scale
  • 1 large zucchini, cut into 1-inch pieces
  • 8 ounces halloumi cheese, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a bowl, combine the zucchini pieces and halloumi cubes.
  3. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper. Toss to coat evenly.
  4. Thread the zucchini and halloumi onto the skewers, alternating the pieces.
  5. Preheat your grill to medium-high heat.
  6. Grill the skewers for 8-10 minutes, turning occasionally, until the zucchini is tender and slightly charred, and the halloumi is golden brown.
  7. Serve immediately.

Notes

  • You can add other vegetables like cherry tomatoes or bell peppers to the skewers.
  • A squeeze of lemon juice before serving adds brightness.
