Memorial Day Pasta Salad

Description

A refreshing and easy pasta salad perfect for your Memorial Day gathering.


Ingredients

  • 1 pound pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, and bell pepper.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice.
  3. Pour the dressing over the pasta mixture.
  4. Add the chopped parsley and basil.
  5. Season with salt and pepper.
  6. Toss gently to combine.
  7. Chill for at least 30 minutes before serving.

Notes

  • For a lighter version, use Greek yogurt instead of mayonnaise.
  • Add grilled chicken or shrimp for a heartier salad.
  • This salad can be made a day in advance.
