- 1 cup chopped fresh rhubarb
- 1/2 cup granulated sugar
- 1/4 cup water
- 2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a saucepan, combine the chopped rhubarb, sugar, and water. Cook over medium heat, stirring occasionally, until the rhubarb has softened and broken down, about 10-15 minutes.
- Stir in the lemon juice, soy sauce, grated ginger, salt, and pepper. Simmer for another 5 minutes until the glaze has thickened slightly.
- Place the chicken drumsticks in a baking dish.
- Pour the rhubarb glaze over the drumsticks, ensuring they are evenly coated.
- Bake for 35-45 minutes, or until the chicken is cooked through and the glaze is caramelized, turning the drumsticks halfway through the cooking time.
- Serve hot.
Notes
- For a spicier glaze, add a pinch of red pepper flakes.
- You can substitute other chicken pieces like thighs or breasts, adjusting the cooking time as needed.
