Roasted Garlic and White Bean Dip

Description

A simple and flavorful dip made with roasted garlic and creamy white beans.


Ingredients

  • 1 head garlic
  • 1 tablespoon olive oil
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the top quarter of the garlic head. Drizzle with olive oil. Wrap in foil.
  3. Roast for 30-40 minutes, until garlic is soft and golden.
  4. Squeeze the roasted garlic cloves into a food processor.
  5. Add the rinsed and drained cannellini beans, lemon juice, and parsley.
  6. Process until smooth and creamy.
  7. Season with salt and pepper to your preference.
  8. Serve with your favorite dippers.

Notes

  • For a smoother consistency, add a tablespoon of water or olive oil while processing.
  • You can substitute other white beans like Great Northern or navy beans.
  • Garnish with extra parsley or a drizzle of olive oil before serving.
