A simple and flavorful dip made with roasted garlic and creamy white beans.
Ingredients

- 1 head garlic
- 1 tablespoon olive oil
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut off the top quarter of the garlic head. Drizzle with olive oil. Wrap in foil.
- Roast for 30-40 minutes, until garlic is soft and golden.
- Squeeze the roasted garlic cloves into a food processor.
- Add the rinsed and drained cannellini beans, lemon juice, and parsley.
- Process until smooth and creamy.
- Season with salt and pepper to your preference.
- Serve with your favorite dippers.
Notes
- For a smoother consistency, add a tablespoon of water or olive oil while processing.
- You can substitute other white beans like Great Northern or navy beans.
- Garnish with extra parsley or a drizzle of olive oil before serving.
