Smashed Potatoes with Sour Cream & Chives

Description

Crispy smashed potatoes topped with sour cream and fresh chives.


Ingredients

  • 1.5 lbs small potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the potatoes until tender, about 15-20 minutes.
  3. Drain the potatoes and place them on a baking sheet lined with parchment paper.
  4. Using a fork or the bottom of a glass, gently smash each potato.
  5. Drizzle the smashed potatoes with olive oil and season with salt and pepper.
  6. Bake for 20-25 minutes, or until golden brown and crispy.
  7. Top with sour cream and chopped chives before serving.

Notes

  • For extra crispiness, broil for the last 2-3 minutes.
  • You can add garlic powder with the salt and pepper for more flavor.
