Spinach and Feta Stuffed Chicken

Description

Juicy chicken breasts filled with a savory mixture of spinach and feta cheese, baked until golden and tender.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup breadcrumbs
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the chopped spinach, feta cheese, breadcrumbs, minced garlic, salt, and pepper.
  3. Cut a pocket into the side of each chicken breast.
  4. Stuff the spinach and feta mixture into the pockets of the chicken breasts.
  5. Drizzle the stuffed chicken breasts with olive oil.
  6. Place the chicken in a baking dish.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Let rest for a few minutes before serving.

Notes

  • You can add a pinch of red pepper flakes to the filling for a little heat.
  • Serve with your favorite side dishes like roasted vegetables or a fresh salad.
