- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup breadcrumbs
- 1 clove garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the chopped spinach, feta cheese, breadcrumbs, minced garlic, salt, and pepper.
- Cut a pocket into the side of each chicken breast.
- Stuff the spinach and feta mixture into the pockets of the chicken breasts.
- Drizzle the stuffed chicken breasts with olive oil.
- Place the chicken in a baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before serving.
Notes
- You can add a pinch of red pepper flakes to the filling for a little heat.
- Serve with your favorite side dishes like roasted vegetables or a fresh salad.
