Description

A fresh take on a classic Caesar salad, featuring crisp spring greens and homemade croutons.


Ingredients

  • 1 head romaine lettuce, chopped
  • 1 bunch spring greens (like spinach or arugula), washed
  • 1 cup croutons
  • 1/4 cup grated Parmesan cheese
  • For the dressing:
  • 2 egg yolks
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare the dressing: In a bowl, whisk together egg yolks, minced garlic, Dijon mustard, and lemon juice.
  2. Slowly drizzle in the olive oil while whisking continuously until the dressing emulsifies.
  3. Season the dressing with salt and black pepper.
  4. In a large bowl, combine the chopped romaine lettuce and spring greens.
  5. Add the dressing to the greens and toss to coat.
  6. Top the salad with croutons and grated Parmesan cheese.
  7. Serve immediately.

Notes

  • For homemade croutons, cube day-old bread, toss with olive oil, salt, and pepper, and bake at 375°F (190°C) until golden brown.
  • You can add grilled chicken or shrimp for a more substantial meal.
