Ingredients

- 1 head romaine lettuce, chopped
- 1 bunch spring greens (like spinach or arugula), washed
- 1 cup croutons
- 1/4 cup grated Parmesan cheese
- For the dressing:
- 2 egg yolks
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 cup olive oil
- Salt and black pepper to taste
Instructions
- Prepare the dressing: In a bowl, whisk together egg yolks, minced garlic, Dijon mustard, and lemon juice.
- Slowly drizzle in the olive oil while whisking continuously until the dressing emulsifies.
- Season the dressing with salt and black pepper.
- In a large bowl, combine the chopped romaine lettuce and spring greens.
- Add the dressing to the greens and toss to coat.
- Top the salad with croutons and grated Parmesan cheese.
- Serve immediately.
Notes
- For homemade croutons, cube day-old bread, toss with olive oil, salt, and pepper, and bake at 375°F (190°C) until golden brown.
- You can add grilled chicken or shrimp for a more substantial meal.
