Yield: 12 large servings

Ingredients:
• 1 box (15.25 oz / 432 g) yellow cake mix
• 1 can (20 oz / 567 g) crushed pineapple in juice, undrained
• 1 package (3.4 oz / 96 g) instant vanilla pudding mix
• 1 cup (240 ml) cold milk
• 1 container (8 oz / 226 g) whipped topping, thawed
• ½ cup (60 g) sweetened shredded coconut
• ½ cup (60 g) chopped pecans or walnuts
• ½ cup (120 ml) pineapple juice (optional, for extra moisture)

How to make it:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix the yellow cake mix with the entire can of crushed pineapple (including the juice). Stir until fully combined.
  3. Spread the batter evenly in the prepared pan and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool completely in the pan.
  5. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until thick.
  6. Gently fold the whipped topping into the pudding mixture to create a light, creamy topping.
  7. Spread the topping evenly over the cooled Pineapple Heaven Cake.
  8. Sprinkle the shredded coconut and chopped nuts over the top. For extra pineapple flavor, lightly drizzle pineapple juice over the cake before serving.
  9. Chill the cake for at least 1 hour before slicing so the layers set beautifully.

Serve this Pineapple Heaven Cake cold for the most refreshing, creamy bite!
